Autumn Harvest Chili
1 ½ Pounds of Diced Pork
¾ Cups of Diced Onion
1 Cup of Diced Assorted Bell Peppers
1 Clove of Garlic Minced
1 ½ Cups of Corn
1 Cup of Diced Butternut Squash or Pumpkin
2 Cups of Diced Tomatoes
2 Cups of Tomato Puree
1 Can Each of Beans ( White, Black & Red )
Spice Mix- Salt, Pepper, Cumin, Corriander, Chili Powder, Nutmeg & Sugar
Method:
Sauté Pork with a touch of Olive Oil until slightly browned and cooked throughout. Add Onion, Peppers, Garlic and Squash until slightly soft. Add remaining ingredients and simmer for approximately one hour. Adjust seasonings to taste and simmer for 15 more minutes and enjoy.
