SLICED SHARP CHEDDAR CHEESE

1LB JUMBO LUMP CRAB MEAT
1 BEATEN EGG
2 TBLSP MAYO
1 TSP DIJON MUSTARD
1 TBLSP OLD BAY
1 TBLSP FINELY CHOPPED FRESH PARSLEY
1 TSP WORSTERSHIRE SAUCE

MIX TOGETHER ALL INGREDIENTS EXCEPT CRAB MEAT, MUFFINS, AND CHEESE

LIGHTLY FOLD CRAB MEAT AND MAKE INTO PADDIES BIG ENOUGH TO FIT ON 1/2 AN ENGLISH MUFFIN

BROIL CRAB CAKES UNTIL LIGHTLY BROWN ON TOP AT SAME TIME TOAST ENGLISH MUFFIN HALVES

ADD CHEDDAR CHEESE SLICE TO EACH CRAB CAKE AND BROIL UNTIL CHEESE MELTS

REMOVE CRAB CAKES AND PLACE ENGLISH MUFFIN

IF YOU HAVE A CONVECTION OVEN, YOU CAN DO IT ALL IN ONE STEP IF YOU HEAT OVEN AT 400 DEGREES AND COOK 7-8 MINUTES

FOR BREAKFAST SERVE WITH SAUSAGE OR BACON AND FRUIT FOR LUNCH SERVE WITH COLE SLAW, FRENCH FRIES OR ONION RINGS DELICIOUS WITH A BLOODY MARY!

SERVED AT FLINCHY'S AS A LUNCH SPECIAL BUT SOON ADDED TO THE MENU
