Serves 4-6
Ingredients:
2 Cups Finely Diced Celery
2 Cups Finely Diced Carrot
1 Cup Finely Diced Red Bell Pepper
1 Cup Finely Diced Onion
1 T Minced Garlic
4 T Dried Oregano
Pinch of Salt and Pepper
6 Cups Diced Canned Tomatoes in Juice
3 Cups Water
1 T Olive Oil
3 Cups Finely Chopped Fresh Basil
1 Cup Sweet Chili Sauce (available in Asian markets)
1 6 oz Can Tomato Paste
Choice of Seafood:
Lobster Meat
Shrimp
Scallops
Clams
Mussels
Crabmeat
Directions:
Lightly Sautee Vegetables (Celery, Carrot, Red Pepper, Onion) and Garlic in Olive Oil
Add Oregano, Pinch of Salt and Pepper, Diced Tomatoes and Water
Bring to Boil, Reduce Heat and Simmer for 20 Minutes
Add Tomato Paste, Stir to Thicken
Remove From Heat, Add Fresh Basil and Set Aside
Arrange Seafood in Large Pot, Cover with Sauce
Simmer Covered until Seafood is Cooked Thoroughly
Serve over Pasta or Rice with Fresh Garlic Bread
